This is a question every bride and groom have to hurdle over as they go to many cake tastings.
Here are my suggestions, after having my own wedding as well as attending hundreds of other weddings, quince's, baby showers, birthday parties and etc.
So you get to your cake tasting...you taste many gourmet flavors, usual flavors of cake. Then comes the toppings, the fillings, and the icings.
You have tasted so many fabulous flavors, you want your guests to remember your wedding, you want them to be in awe of your fabulous cake that you spend hundreds of dollars on...You are NOT going to like my suggestion.
After attending so many weddings and hearing others and their comments on various types of cakes, I have learned a great many things.
-A good many people about 89% expect a traditional white cake to be under that icing.
-Many people are allergic to Citrus, like lemon, strawberry, raspberry, coconut.
-79% of people do not like flavors such as strawberry, coconut, banana, carrot, or red velvet.
-Chocolate 50% of folks like this over vanilla or white. Which means 50% of folks like white or vanilla over chocolate.
With the above knowledge you now have let me fill in the rest of the information. Here are some simple rules or facts for you:
- Lots of people have nut allergies, so no peanut butter, almond butter, almond powder, pistachio, etc.
- Lots of folks do not like or are allergic to citrus (I am one of those), Lemon, Kiwi, Lime, Strawberry, Raspberry
- Older folks do not like Fondant, or Marzipan. They like the traditional icing frosting. This is one item you can overlook if you have a design you really like.
- Fondant or Marzipan are a bit more difficult to cut, it sweats a bit more if you are in a hot environment, the texture some folks do not like.
- Icing is lovely and can be made to look beautiful, however, it does melt if the environment is too hot.

Suggestions: Stick with tradition so that everyone will eat your expensive cake and you do not have to take a bunch home or worst yet, throw it away.
Use your creativity and flair on the outside of the cake in color, flowers, decorations, and cake topper.
Keep your cake simple with the flavor.
Chocolate or White/Vanilla are traditional. You can vary the layers if you like. You cannot go wrong with these two flavors they are a 50/50 chance everyone will eat!
Here you can get creative. Have devils food, fudge, milk, dark, or dutch chocolate. In between layers have a ganache, fudge, or milk chocolate.
For your white cake you can have a Bavarian cream in the middle, or a cream cheese icing.

This will avoid anyone with allergies, or an extreme dislike for a flavor.
If you want a special flavor use that in your cake top that you and your groom will share. This will also cut down on cost!
You can also make your grooms cake in your own flavor and flair, and have your wedding cake traditional. Again this will save you money as well!
