Royal Icing Recipe

HI Everyone!  It has been a bit since I last blogged, my apologies!  
Recently I was asked to make a 16th three tier birthday cake.  I wanted to make some flowers for the cake out of Royal Icing.

I have been baking cakes for years and am looking for Icing that does not melt, drip, or run down my cakes.  The store bought cake icing just does NOT hold up these days.  You have to constantly keep it in the refrigerator to work with it and to keep it from running down your cake. 
So in my search for a better icing...I looked to the tried and true Royal Icing used primarily on wedding cakes for piping as well as flowers.



I found the following Recipe:

Royal Icing:
3 oz Egg White (approximately 2 eggs)
1 tsp Vanilla 
4 Cups Confectioners Sugar

1. Beat egg and vanilla until they are frothy. Bubbles will appear.
2. Add sugar gradually whisking until the mixture is shiny.
3. Beat on high speed until stiff glossy peaks appear.  Approximately 5-7 minutes.
4. Add food coloring if desired.  
This Icing will last stored in the refrigerator for 3 days.

I found a few things that I just did not like with this recipe:

Firstly, and most importantly to me, The taste was terrible.  There is an aftertaste when using confectioners sugar that is just not nice. The more vanilla you add the more runny your mixture, therefore you have to add more sugar, thus never relieving the problem.

Secondly, It is better to use Gel food coloring rather than liquid.  The liquid will thin out the icing and depending on how much you need to add, you may need to add more icing.

It does harden so cannot be used overall for the entire cake.

Things I did like:

It was easy to use and I did not have to keep it cold to work with it.

It hardened and made nice flowers.

It is Fabulous for piping names and the like!

The flowers and the leaves you can see melted and ran together, those were using conventional icing store bought.

The wording as well as the icing on the sides I used Royal Icing recipe and the numbers and words were very easy to write, as well as the over all cake cover was lovely.

Luckily the cake tasted great!  And my daughter loved it cuz I was not pleased with the store bought icing and the runny messy look!  But trial and error!
